Now he leads his team to win your hearts with a wide range of the finest food from the Imperial court of Hue, the old royal port city of Hoi Ann, and Hanoi, the nation’s capital. Luu Tru has been Chief Chef at The Emperor, Cafe Au Lait and Hanoi Garden in Hanoi, and The Mandarin in Ho Chi Minh City.

During his working experience in Vietnam, he has travelled extensively from north to south of the country, to learn the diverse range of dishes from all the country’s major culinary regions. It was in Hue and Hoi An that he had the opportunity to learn the skills which were passed down in extended families of the Imperial chefs - a skill which he brings to Sao Nam Empire Shopping Gallery today.

The favorite 'banh coun hap la sen' (rice flour patties stuff with chicken and minced shrimp and steamed in a lotus leaf) seems so simple that you would never guess the complexity of its preparation. He also displays an enormous amount of ingenuity-refining ordinary dishes until they become something truly special.

Hue Imperial cuisine is distinctive. Vietnamese people regard it as the best in the country. Its culinary traditions demand that meals be presented aesthetically, harmonizing food elements, decorations and colors to create a gastronomic work of art.
